We have a great well rounded team including the experienced and well respected Chef, Andrew Targett, who used to own Award winning Cafe Elizabeth in Tauranga, and wons his own BBQ comoany called Barbacoa, an ex Heavy metal singer for a band called Taramis and now Banker Shane Southby and an Enviromental Scientist now Port Crane Driver, Dion Young. We all met and grew up in an state run orphange and this meant that we burnt as many things as we could find. As we grew older we found that we could use fire with other sorts of things apart from cars, trees and other kids, We grew up being self sufficient and learning to hunt and cook our own food. We couldnt hunt very well at first and just relied on being self sufficient, which meant we were hungry most of the time and not very sufficient or efficient..
Gas wasnt very common growing up, as we were in enough trouble without something explosive at our disposal . And so fire and wood and meat became our life. We learned the different types of wood that give unique flavours to food such as pohutukawa, the NZ xmas tree.We never had a xmas growing up, so this tree was a symbol of what we never had.. which is why we burn it.
We have evolved into BBQ, we were doing this as kids without realising what we were doing.. We just made a fire and then waited to see what would run from the forest. We have also grown up with the Weber BBQ. These are typically known as Weber Kettle BBQ, and are charcoal run. They are great focal point of of our weekend and backyard. It is how we communicate, discuss our lives and solve problems. all around the BBQ.
Our team is much like the A Team =, we were a crack team of bbqers that were sent to prison for a crime we didnt commit. We did not use the gas BBQ to cook ribs nor did we ever boil ribs, once we escaped we have battled ever since to clear our name, and now we go around helping other BBQers, much like the A Team.

Tell us a bit about your BBQ speciality…We specialize in all the food groups. Beef, Pork, Lamb and seafood. These form the triangle of food. Pork at the top, as that is where bacon comes from. Then the other food groups fall under that. BBQ sauce is right down the bottom as something you have in small amounts. Its an upside down triangle. or sort of like a pyramid side. The Egyptians had a lot of good BBQs too I hear,
But we use a Wine Barrell smoker that is unique, we like to do things at a low temperature in the wine barrel and do them slow. So that the meat cooks at a low temperature.. This is why we get hungry and drink a lot of beer. As the food takes so long to cook. But like the Egyptians used to say.. ” If you want a decent feed, then you gotta cook it right” So thats why we take the time, once you have proper BBQ you wont want anything else.. We arent talking about BBQ, BBQ. This is real BBQ, Fire wood, charcoal and sometimes can be life threatening if it all goes wrong..

If you were stranded on an island and could only take three BBQ-related things with you, what would they be? If we were stranded on an island it would be clearly Dions fault as he is the only one with a boat.. We would need a cow, a pig and beer.. We could make do with these and find the rest of the neccessary wood and BBQ pit we have made from the earth before.. much like a hangi. Where we cook the food underground!
